Whether you are throwing a dinner party or looking for a quick snack, this is the easiest appetizer to make that will please everyone.
I really like this recipe because you can be creative with what kind of cracker you use. And trust me, it does make a difference! This time I just used sea-salted soda crackers but have experimented with other ones as well, I've also done this on toasted naan bread which is delicious! If you're feeling adventurous, try making your own using this recipe from Chef John.
I used fresh thyme we grew in our garden at the time, but there's no shame in using dried thyme or another herb if thyme isn't your thing. Looking back at this recipe I wanted to keep things simple and just used a plain goat cheese (which is my favourite) but feel free to use any soft flavoured cheese!
